ROYAL ICING RECIPE
{lemon}
Ingredients:

2 pounds confectioners sugar

5 tablespoons meringue powder

1/2-3/4 cup freshly squeezed and strained lemon juice – or you can simply use water

1 tablespoons vanilla extract

2 tablespoons light corn syrup
Instructions:

Add meringue powder to your mixing bowl.

Pour in ¼ C of your lemon (or water) and vanilla extract to bowl.

Whisk mixture until frothy.

Add in powdered sugar.

Using paddle attachment, mix on low until everything starts to come together. Mixture will be thick. Add small amounts of your lemon (or water) until desired consistency.

Turn off mixer and scrape bowl. Then add in corn syrup. Return to mixing for 3-5 minutes. Icing should become light and fluffy.
Notes: I usually use my icing within a couple days, but you may store in fridge for about 10-14 days. Icing may separate, but you can mix it up and it will be fine.
